    Not Gatineau's finest

    This is a lovely bread roll, perhaps a Brioche but it bears no comparison to a bagel. I’m happy to bring one from N London for your bakers to copy. A bagel is boiled as far as I know and that gives it a chewy texture- Gatineau should stick to what you do best which is almost every other bread and patisserie I have bought from you.

    You’re right that a traditional bagel is boiled to achieve its classic chew. Our version is intentionally different: it is steamed rather than boiled, which allows us to incorporate it smoothly into our daily production while giving it a softer, enriched texture with a distinctly French twist.


    As we’re not a bagel‑only bakery, our aim isn’t to replicate a New York–style bagel, but to offer a product that fits naturally within our French baking heritage. It has become very popular both in our shop and with our wholesale customers, and we’re pleased in how we make them and how it complements the rest of our range.
